1. Creamy Goat Cheese Grits
I wouldn't be a nice Southern gal if I didn't have this on my list. A southern staple that can be made savory or sweet, hearty or scant. It's a staple that can be easily dressed as the season or your mood changes.
2. Lentil Stew
A simple stew with 3 ingredients, some seasoning and voila! Dinner.
3. Tahini Roasted Broccoli
4. Roasted Sweet Potato with Chickpeas, Goat Cheese, and Coriander
A jazzed up sweet potato can be filling too. If you live in the pollen state (NC), you can find these everywhere you look. And if goat cheese is not your thing, try whatever cheese makes your belly smile.
5. Crispy Kimchi and Cheddar Omelette
Eggs are usually my go to. I call it single girl dinner. That and popcorn are staple in the My Early Retirement Journey household.
6. Pan-Seared Steak and Salad
If you don't want to stay in the house over a hot stove, enjoy the hot sun and fire up the grill. What says summer more than salad. Add a bagged arugula salad to this sizzling dish and dinner is served!
7. Slowww Roasted Salmon
Salmon, an oven, and a little sprinkle of salt. How much easier can it get!

These all look very healthy MERJ and it would make me happy if I knew you were eating some of these each week. BUT.... I fear the cereal and popcorn still hold you hostage :-/ The sweet potato looks particularly yummy and am sure you could crank out 3 ingredient lentil stew on evening after work?
ReplyDeleteYes and no..did have some lentils and rice today; and used a rotting banana to make some waffles. However, still have a rotting cantaloupe and pineapple from over a week or so that I for some reason am refusing to cut. Sigh. Hope you had a great weekend!
DeleteWell that is a good start, I am encouraged. Chuck the cantelope and pineapple out and start again this week. Maybe only buy 1 fruit at a time? After all you are near plenty of shops so if you get through the first fruit you can always pop out and buy another? Saves wasting both food and money. Too hot here and probably not nearly as hot as where you are, but I'm British so am not used to 30c heat and got to moan about it cos it's in my psyche!!

I can't decided based on your commentary if i would like living in britain or not...hmmm... still have the rotting fruit. Trash day tomorrow, so we'll see. Got some corn for the week to ease back in...
